The Cocktail Party Hour
It feels like summer is well and truly on it's way.
With that extra hour of light so generously given to us from daylight savings, what better way to see the sun down than with a few of your friends and a tasty, refreshing beverage. Pair up your dusky evenings with our cocktail of choice - the Herbal Gin Soda. It's light, clean and simple, the perfect way to welcome in the summer months ahead.
the Herbal Gin Soda
1/2 cups sugar
a spring of fresh herb such as basil, lemon verbena, mint, tarragon, or thyme
1 teaspoon freshly squeezed lemon juice
Gin of your choice
Ice, for serving
Sparkling water or club soda
2 Picardie Glasses
Put sugar and 1 cup water into a medium saucepan over medium heat. Bring to a simmer, stirring until the sugar has dissolved. Remove from heat and add herbs. Cover and let cool completely. Pour syrup through a fine sieve into a small bowl, discard herbs. Stir in lemon juice and gin. Fill your Picardi Glasses with ice. Add 2 to 4 tablespoons syrup; top with sparkling water or club soda, and stir.
