Preparing for the Winter Solstice with Falastin: A Cookbook

As we prepare for the winter solstice this coming Sunday, we have been reading Falastin: A Cookbook by Sami Tamimi & Tara Wrigley. The book is a vibrant collection of recipes that reflect Palestinian traditions but are also utterly contemporary. Using ingredients in simple and revolutionary ways Falastin is a wonderful way to plan a comforting feast for the solstice. We are drawn to the green lentils, chard capsicum and warm tahini. And the opportunity to bring out the preserved lemons and squash.

Winter solstice celebrates the longest hours of darkness or the rebirth of the sun and is believed to hold a powerful energy for regeneration, renewal and self-reflection.
